First off, let me give you a little history on Berkshire Hogs; they are a rare breed that originated from Berkshire England. It has been said the Berkshire Hog became popular with Cromwell and his troops during the English Civil War, specifically because they are a very resilient breed. They are hardy animals that adapt well to pasture.
Berkshire hogs are also a very recognizable breed. They are black with six white points and pink skin surrounding their nose; their dark-colored skin reduces the chance of sunburn. They have a firm build, short neck and stubby legs with strong feet. Medium to large animals, with the sows coming in at about 500 pounds and the boars at around 700-800 pounds, this breed yields a lot of meat.
As well, Berkshire Hogs have a good temperament for ease of handling and perform well in outdoor operations. They are friendly and curious animals and will follow you all around the pasture if you are doing any work. And since they are very sociable animals, you will often find them playing with their litter mates.
Litters of romping piglets are a common sight here at Circle B because Berkshire sows are extremely good mothers. Since the sows perform well on pasture—and ours are strictly pasture-raised—they are stress free, making for larger and healthier litters; we have had litters as large as 14 piglets.
While Berkshire sows are excellent for breeding, the hogs are definitely the alternative to “the other white meat”. Berkshire meat has more marbling since the fat content is higher, and the meat is firmer. This pork is dark and juicy, and has a rich flavor; as you are eating the meat you think, “So this is what pork should taste like…” Once you have tasted the deep rich flavor of Berkshire pork you will never buy supermarket meat again.
