Spinach is a great accompaniment to pork. We love is sauteed with lots of garlic.
- • 6 cups fresh spinach
- • 1 tablespoon olive oil
- • 1 clove garlic, minced
- • ½ teaspoon crushed red pepper flakes
- • salt
- 1. Heat the olive oil, garlic, and red pepper over medium heat.
- 2. When the garlic starts to turn a light golden color, add the spinach.
- 3. Cook the spinach until wilted and bright green.
- 4. Remove from heat and salt to taste.
