Eggplant is so delicious!
I was brought up in Brooklyn and then my family moved to Staten Island, NY. My Aunt Wanda made the best Eggplant Parmesan. She would egg it, flour it, and lightly fry it. She would then layer them in stacks with mozzarella and homemade Italian tomato sauce. She would top them with grated Romano Cheese. They would come out of the oven with the cheese nicely browned and the cheese oozing. It was delicious!!
I prepare Eggplant Parmesan as often as I can. I always have a pan of it in the freezer. All I have to do is defrost and pop it in the oven. Add a tossed field green salad with balsamic vinaigrette and you have your self a great tasting dinner.
The other way I like to have Eggplant is to grill it. Here is a great eggplant recipe:
Slice it in rounds and brush it with Olive Oil. Freshly grind salt and pepper on the slices. Slice a couple of red onions and brush with olive oil.
Grill the vegetables until done. Chunk the vegetables and put in bowl. Chop some fresh parsley and garlic cloves and add to the vegetables. Toss the the vegetables with balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Serve with grilled steak or grilled pork chops. Enjoy!
