I saw these on Facebook and thought, “What a great idea!” There is a long way to make these, but I decided to try making them with Marina’s Italian Meatballs and Marina’s Tomato Sauce. This cuts the time down considerably, and it tastes just as good. Your family will think you slaved over a hot stove for hours!!
- Bring a large pot of water to a boil and cook the spaghetti to al dente. Drain the pasta and set is aside to cool. When the pasta is cool enough to handle whisk the eggs in a bowl and add to the pasta. Stir to combine and add the romano cheese, and 1 cup of tomato sauce.
- Lightly spray a couple of 12 cup muffin tins with cooking spray. Place about 1/3 cup of spaghetti mixture into each cup in the pan. Using a spoon or your fingers press down on the center of the spaghetti to for a cup. When the muffin tin is full put in a preheated oven for about 15 minutes at 400 degrees.
- When the cups are cooked remove from the oven and let cool. When you are ready to serve put a tablespoon of marinara into the center of the cup, top it with the meatballs and top with extra marinara and grated Romano Cheese. I bet you can’t eat just one!!
