In the spring the Asparagus are delicious and so tender. This recipe works really well highlighting the asparagus!
- • 12 oz. flank or sirloin steak, sliced
- • 1 tsp. oil, plus more for cooking
- • 5 tsp. light soy sauce, divided
- • 1 tsp. corn starch
- • 1 lb. fresh asparagus
- • ¼ tsp. salt
- • ¼ tsp. sugar
- • 2 tsp. dark soy sauce
- • ½ tsp. sesame oil
- • ¼ cup hot chicken stock or water
- • 3 Tbsp. Shaoxing wine
- • 3 garlic cloves sliced
- • 1 onion, chopped
- • Cornstarch slurry (2 Tbsp. corn starch mixed with 2 Tbsp. water)
- • Freshly ground white pepper
- In a small bowl, combine the sliced beef with 1 tsp. oil, 1 tsp. light soy sauce, and 1 tsp. cornstarch. Wash the asparagus, and cut about 1 inch off the bottom ends. Cut into 2-inch pieces on an angle. Chop onion.
- Next, combine the salt, sugar, the rest of the light soy sauce (4 tsp.), dark soy sauce, sesame oil, and stock or water into a bowl. Mix very well and set aside. Measure your wine, chop the garlic, and mix cornstarch slurry; make sure this is ready before you begin cooking.
- Heat your wok until it is smoking. Add a couple Tbsp. of oil and swirl it around to coat the wok. Quickly spread the beef slices around in an even layer. Let it sear for 15-30 seconds without stirring. Then give it a quick stir to sear the other side. The meat should be browned and should not stick, if wok was heated enough. Take the meat out of the pan and set aside.
- Keep the wok on high heat and add another Tbsp. of oil into the into the wok. Stir in garlic, onion, and asparagus. Stir for about 10 seconds and add the Shaoxing wine around the rim of the wok. Cover, leaving the heat on high. Let cook for 20-30 seconds. Remove the cover and add the sauce mixture and a pinch of white pepper. Add the beef back to the pan and stir. Let the liquid bubble up. Stir the cornstarch slurry to make sure the starch is dissolved and pour in about half of it. Stir for a few seconds. If sauce is too thin, add more slurry. If sauce is too thick, add water or stock. Plate and serve immediately.
